Method
Step 1 of 5
Preheat oven to 240°C/220°C fan-forced. Line a large baking tray with baking paper. Place edamame, in a single layer, on tray. Spray with oil and sprinkle with chilli flakes. Bake for 15 minutes or until warmed through and slightly charred.
Step 2 of 5
Meanwhile, place coleslaw in a large bowl, reserving sauce until required and reserving noodle sachet for another use. Add oil and lemon juice to bowl. Season with pepper and toss to combine.
Step 3 of 5
Cut each chicken breast horizontally into 2 thin fillets. Spray a large frying pan with oil and heat over medium-high heat. Cook chicken for 4 minutes on each side or until browned and cooked through.
Step 4 of 5
Meanwhile, combine reserved sauce sachet and sriracha in a small bowl.
Step 5 of 5
Divide half of the coleslaw over roll bases. Top with half of the cucumber, chicken, sauce, then remaining cucumber. Sandwich with roll tops and serve with edamame and remaining coleslaw.
