For the garnish
  • 4 sprigs basil
  • 400grams plant based mince
  • 300grams spaghetti
  • 1tablespoons canola oil
  • 1 medium red onion, peeled and diced
  • 4 cloves garlic, peeled and diced
  • 200grams button mushrooms, washed, drained and sliced
  • 1tablespoons chilli flakes
  • 1 2/3 cup passata
  • 1 medium carrot, peeled and finely diced
  • 1 pinch salt
  • 1 pinch cracked black pepper

Description

A lightly spiced take on a classic Italian pasta dish.

Method

Step 1 of 6

Heat up the canola oil in a large pot to a medium heat with the plant based mince and fry while tossing for 10 minutes.

Step 2 of 6

Add the onion, garlic, carrot and mushrooms to the pot and fry for a further 6 minutes.

Step 3 of 6

Cook the pasta in salted water as per packet instructions.

Step 4 of 6

Add the rest of the ingredients to the pot apart from the basil, salt and pepper.

Step 5 of 6

Allow the pot to simmer for 10 minutes for the sauce to reduce.

Step 6 of 6

Remove the pasta from the pot and drain. Serve with the bolognese, garnish with basil and season to taste.
