  • 1 cup apple juice
  • 1/2 cup rolled oats
  • 300milliliter almond milk unsweetened
  • 2teaspoons chia seeds (optional)
  • 1/2 cup dried apricot
  • 6 weet-bix

Method

Step 1 of 4

Place the unsweetened almond milk, apple juice, oats and chia seeds into a medium-sized pot and bring to a gentle boil.

Step 2 of 4

Turn down and simmer for 3 minutes, then crumble the Weet-Bix into the porridge.

Step 3 of 4

Spoon the mixture into some glass jars or bowls and sprinkle with desiccated coconut and chopped apricots on top.

Step 4 of 4

Serve hot or cold.
