  • 300grams goats cheese
  • 1/2 lemon zest
  • 4tablespoons pistachio nuts, shelled and chopped finely
  • 4tablespoons dried cranberries, finely chopped
  • 1teaspoons rosemary, fresh, finely chopped
  • 2 large pears, cored and sliced

Description

This colourful goats cheese log has the ideal mix of sweet and savoury, delicious served with slices of pear and crackers.

Method

Step 1 of 4

Place the goats cheese and lemon zest in a bowl and mix well. Spoon on to a sheet of foil and shape into a thick log. Wrap in foil and place in the fridge to firm up for 20 minutes.

Step 2 of 4

Spread the dried cranberries, rosemary and pistachios out on a large plate, remove the goats cheese from the fridge and peel off the foil.

Step 3 of 4

Roll the goats cheese log in the dried fruit and nut mix to coat.

Step 4 of 4

Serve with thinly sliced pears and wholemeal crackers of your choice.
