- 180grams halloumi
- 3tablespoons olive oil
- 2tablespoons honey
- 1tablespoons lemon, juiced and zested
- 1teaspoons thyme
- chilli flakes (optional)
Description
With honey, lemon and thyme, this barbecued haloumi recipe is perfect to serve as an entree, a side dish or with salad.

Step 1 of 5
Use a small bowl to mix the sauce. Add 2 tbs of the olive oil, honey, lemon juice and zest, the thyme leaves and chilli flakes, if you are using them, and whisk the ingredients together. Set the bowl aside while you prepare and cook the halloumi.

Slice the halloumi into 8 equal slices. Using a piece of paper towel, pat both sides dry. Heat a frying pan or the BBQ grill plate over a medium - high heat and add the remaining 1 tbs of oil.

Add the slices of halloumi to the hot oil and cook one side for about 3 minutes, or until it begins to develop a golden brown colour then turn the cheese over and cook the other side.

When the halloumi is golden brown on both sides, turn the heat down to low and drizzle the honey and lemon sauce into the pan to coat the cheese slices. Cook for a further 2 minutes each side. The halloumi will take on a deeper caramel colour when the honey infuses with the warm cheese. I used raw honey and the depth of colour, not to mention flavour was amazing. Enjoy.

If you enjoy a less sweet more 'tart' flavour add more lemon juice. I taste the sauce as I go to make sure I get the right balance for us, it's really a matter of individual taste. Some other ingredients that I've tried and have worked well are: lime, orange or mandarin zest and juice in place of the lemon; smoked paprika, oregano or rosemary as a substitute for the thyme; or just simply, cracked black pepper and a sprinkle of Himalayan pink salt.
