  • 4 ripe bananas, cut into 4cm lengths
  • 400milliliter canned coconut cream
  • 1 cup frozen raspberries
  • 1tablespoons pure icing sugar
  • 60grams raspberries
  • 60grams blueberries
  • 125grams strawberries, hulled, quartered
  • 4 vegan wafers, halved diagonally

After an easy vegan dessert recipe? Try our nice-cream sundaes made with bananas, berries and coconut cream. It's the perfect end to any meal.

Method

Step 1 of 3

Line a baking tray with baking paper. Place banana, in a single layer, on tray. Freeze for 4 hours. Refrigerate coconut cream can and chill overnight.

Step 2 of 3

Scoop thick top layer of cream from coconut cream and place in a bowl, then, refrigerate until ready to use. Place banana, frozen raspberries and remaining cream in a food processor. Process, occasionally scraping down side of bowl, until smooth and creamy.

Step 3 of 3

Whisk reserved cream with sugar until thick. Working quickly, spoon banana mixture into 4 glasses. Dollop with whisked cream and top with berries and wafers. Serve immediately.
