  • 4 radishes, thinly sliced
  • 2 spring onions, sliced
  • 200grams smoked salmon
  • 1/3 cup garlic aioli mayonnaise
  • 4 cups salad leaves (to serve)

Description

This smoked salmon salad is ultra-refreshing and so easy to make. Combine salmon, avocado, radish, cucumber and greens to have lunch ready in 15 minutes.

Method

Step 1 of 4

Halve cucumbers lengthways, scoop out seeds using a teaspoon and discard. Slice on an angle.

Step 2 of 4

Halve avocado, remove stone and slice. Scoop out flesh using a large spoon.

Step 3 of 4

Pile salad leaves onto serving plates then top with cucumber, avocado and radish. Add slices of smoked salmon.

Step 4 of 4

Drizzle with aioli and garnish with spring onions. Serve with rye toast.
