  • 1tablespoons olive oil
  • 500grams pork fillet, diced
  • 1 large onion, peeled and diced
  • 4 cloves garlic, peeled and minced
  • 5centimeters ginger, peeled and grated
  • 1 red chilli, sliced
  • 3/4 cup chicken stock, hot
  • 4tablespoons tomato ketchup
  • 2tablespoons apple cider vinegar
  • 2tablespoons honey
  • 1tablespoons soy sauce
  • 2 capsicums, red and green, cored and diced
  • 1teaspoons cornflour

Description

Method

Step 1 of 3

Heat the oil in a large pan and cook the pork for 2-3 minutes until sealed on all sides.

Step 2 of 3

Tip the pork into the slow cooker with onion, garlic, ginger, chilli, stock, ketchup, vinegar, honey and soy sauce, stir well and cook on high for 2.5 hours with the lid on.

Step 3 of 3

Add the diced capsicums and cook for 40 minutes more. Whisk the cornflour with 1 tablespoon of water in a small bowl, stir into the sauce and cook, stirring, until thickened.
