  • 1kilograms brisket, chopped into chunks
  • 4tablespoons chipotle paste
  • 2 medium red onions, peeled and sliced
  • 3 cloves garlic, peeled and minced
  • 2 medium limes, juice and zest
  • 1/3 cup apple cider vinegar
  • 2 cups beef stock, made with 1 stock cube
  • 1 bunch coriander, fresh, chopped, stalks included

Description

This tender beef barbacoa is the ultimate taco or burrito filling with smoky chipotle and zingy lime.

Method

Step 1 of 2

Place the brisket, chipotle paste, onions, garlic, lime juice and zest, vinegar and beef stock in the slow cooker, stir in half of the coriander and the stalks and stir well.

Step 2 of 2

Cook on high for 2 hours, stir and reduce the heat to low for 4 hours, until the meat pulls apart easily. Serve scattered with fresh coriander.
