  • 1 large carrot, peeled and grated
  • 2 cloves garlic, peeled and minced
  • 2teaspoons thyme, dried
  • 2tablespoons tomato puree
  • 1tablespoons plain flour
  • 1teaspoons Worcestershire sauce
  • 900grams potatoes, peeled and chopped
  • 2tablespoons creme fraiche, reduced fat

Description

Slow cooker shepherd's pie is well worth the wait for a rich and tender slow braised filling.

Method

Step 1 of 4

Heat the oil in a large, non-stick pan on medium heat and cook the onions, thyme and carrots for 5 minutes, stirring. Stir in the garlic and mince and cook for 2 minutes.

Step 2 of 4

Stir in the tomato puree, flour and Worchester sauce and cook for 1 minute. Tip the mix into the slow cooker with a dash of water.

Step 3 of 4

Cook the potatoes in a large pot of boiling water for 8-10 minutes, until tender. Drain well, mash to a coarse mix and stir in the creme fraiche.

Step 4 of 4

Smooth the mash on top of the mince in the slow cooker, place the lid on and cook on low for 5 hours, until bubbling at the sides.
