  • 405milliliter apricot nectar
  • 1tablespoons Dijon mustard
  • 3 cm piece ginger (finely grated)
  • 3 sprigs thyme
  • 410grams Woolworths apricot halves in juice, drained
  • 1 cup couscous
  • 2tablespoons continental parsley (finely chopped)
  • 1 broccolini, steamed (to serve)
  • 2tablespoons natural almonds (sliced)

Description

Cook an Aussie classic with this slow cooker apricot chicken recipe. It's tangy, succulent and a family favourite you’ll make again and again.

Method

Step 1 of 3

Heat half the oil in a large frying pan over high heat. Cook half the chicken for 3 minutes on each side or until browned, then transfer to a 5.5L slow cooker. Repeat with remaining oil and chicken.

Step 2 of 3

Add onion to same pan, reduce heat to medium and cook for 8 minutes or until softened. Add soup mix, nectar, mustard and ginger, stirring to combine. Transfer to a 5.5L slow cooker and add thyme. Cover with lid, then cook on low for 5 hours, adding apricot halves for the last 20 minutes of cooking

Step 3 of 3

Place couscous and 1 cup boiling water in a heatproof bowl, stirring to combine. Cover and stand for 5 minutes. Fluff with a fork to separate grains, then stir in parsley and season. Divide couscous among plates. Top with apricot chicken and broccolini, scatter over almonds, then serve.
