  • 1teaspoons Chinese five spice
  • 2teaspoons cornflour
  • 1/2teaspoons white pepper
  • 2 cinnamon sticks
  • cooking twine
  • 4 cm piece ginger, sliced
  • 2 green shallots, sliced
  • 2 bunch broccolini, trimmed
  • 1/2 cup salt-reduced soy sauce
  • 1 orange strips and juiced
  • 1 1/2 cup chicken stock
  • 3 garlic cloves, sliced
  • 1/2 cup brown sugar
  • 1tablespoons oil
  • 3.40kilograms boneless pork shoulder (approx.)
  • 2tablespoons sea salt

Method

Step 1 of 7

Preheat oven to 220°C. Remove netting from pork shoulder. Re-tie with kitchen twine at 5cm intervals.

Step 2 of 7

Combine salt, five spice, and pepper in a bowl. Rub salt mixture over surface of pork. Place into a roasting pan. Drizzle with oil and roast for 1 hour.

Reduce oven temperature to 160°C.

Step 4 of 7

Combine chicken stock, soy sauce, orange peel, orange juice, garlic, ginger, shallots, sugar and cinnamon sticks in a bowl.

Remove pork from oven. Pour liquid mixture around pork. Cover with foil. Roast for 3 hours or until meat is tender. Transfer to a chopping board. Cover with foil to keep warm. Stand for 10 minutes before slicing (reserve 6 cups of pork for pork sliders).

Step 6 of 7

Place roasting pan over medium heat and bring pan juices to the boil. Combine cornflour and 1tbs cold water in a bowl. Add to sauce. Stir until sauce thickens.

Step 7 of 7

Bring pan of water to boil. Add 2 bunches trimmed broccollini. Cook for 1 minute or until tender. Drain. Serve with pork and sauce.
