  • 700grams mixed dried fruit
  • 30milliliter sherry (or other fortified wine)
  • 1/4 cup almond flakes
  • 4 eggs beaten
  • 3/4 cup SR flour
  • 1/2 cup stewed apple
  • 2teaspoons ground ginger
  • 2teaspoons mixed spice
  • 1 cup cinnamon (optional)
  • 1/2 cup honey
  • 3-4 cup stale breadcrumbs
  • 2tablespoons shredded coconut

Description

Christmas pudding with a twist.
Instruction tip
You can add juice instead of sherry. If your mix is too wet add a little more flour. You could also use a mashed banana instead of the apple.

Method

Step 1 of 10

In a large bowl add: Dried fruit, almond flakes, shredded coconut, sherry, honey and all of the spices Mix well, cover and stand for 6 hrs at room temperature, longer if you want.

To the bowl alternate between the flour and the egg mixing after each addition. Mix in the stewed apple and the chopped up stale bread

Add the chopped up stale bread to the mixture, mix well.

Grease your pudding tin or pudding bowl. Line with baking paper, with sides overlapping.

Step 5 of 10

Add the mix into the pudding tin, flatten down mix.

Place a small piece of baking paper on top of the mix.

Put water into the slow cooker halfway up the side of the tin.

Step 8 of 10

Turn slow cooker on to high, allow it to boil for 2 hrs, then turn down to low. Leave to cook for 6 hrs on low.

I also made a mini pudding, which is pictured, I just reserved some of the mix. Greased a small bowl, then follow steps 4, 5 & 6. Cover tightly with foil on top. Cook in a saucepan with water 1/2 up side of the bowl, put saucepan lid on, bring to boil. You have to keep a watch that it doesn't boil dry, add more water as needed. Turn down to keep simmering. I cooked the little one for 2 1/2 hrs, then turned off and let it sit in pot until water was room temp. This little bowl holds 1 1/2 cups.
