- 1/2 cup Ayam Thai Massaman Curry Paste
- 1 can Ayam Coconut Milk
- 2tablespoons vegetable oil
- 1kilograms beef chuck steak, fat removed, cut into 3cm pieces
- 1kilograms brown onion, thinly sliced
- 1packets 475g tub mashed potato, warmed
- 1tablespoons fried shallots
- 1/4 bunch coriander, leaves picked, to serve

Description
WINTER WARM-UP A sublime mix of herbs and spices, Ayam Thai Massaman Curry Paste pairs beautifully with creamy Ayam Coconut Milk to make a silky-smooth, sweeter curry base.
Method
Step 1 of 4
Divide mixture among bowls and top with halved eggs. Scatter over onion and sesame seeds, then serve with soy mixture.
Step 2 of 4
Heat half of the oil in a large saucepan over high heat. Cook beef, in batches, for 5 minutes or until browned. Transfer to a plate and set aside. Add onion and cook for 5 minutes, stirring, over medium heat or until starting to soften.
Step 3 of 4
Return beef to pan with paste, then stir until well coated. Add milk and bring to the boil. Reduce heat to medium-low and cook, covered, for 11/2 hours or until beef is tender.
Step 4 of 4
Preheat oven grill to high. Spoon curry into a 5.5L baking dish. Spread mash over curry and brush with remaining oil. Grill for 10 minutes or until mash is hot and edges are golden. Serve scattered with shallots and coriander.
