- 1tablespoons curry powder
- 250grams cooked turkey meat, shredded
- 100grams bean sprouts, trimmed (to garnish)
- 1 red capsicum, halved, deseeded, thinly sliced
- 1 carrot, cut into matchsticks
- 1/2 cup coriander leaves (to garnish)
- 1tablespoons ginger, grated
- 1/2 small wombok, thinly sliced (Chinese cabbage)
- 8 cooked peeled prawns
- 1/4 cup soy sauce
- 2tablespoons rice bran oil
- 1tablespoons Chinese cooking wine
- 1 clove garlic, sliced
- 375grams singapore-style noodles
Method
Step 1 of 2
Place noodles in a large heatproof bowl. Cover with boiling water and set aside for 5 minutes to soften. Drain.
Step 2 of 2
Heat oil in a wok over high heat. Add ginger, garlic and curry powder and stir-fry for 30 seconds. Add carrot and capsicum. Stir-fry for 2 minutes. Add noodles, turkey, prawns, soy and cooking wine. Toss for 2 minutes or until heated through. Add wombok and toss until wilted. Garnish with sprouts and coriander leaves and serve.
