  • 270grams dried ramen noodles
  • 1 1/2tablespoons vegetable oil
  • 500grams chicken mince
  • 2 bunches pak choy, roughly chopped
  • 175grams chicken & cashew nut meal base
  • 420grams can corn kernels, drained
  • 1/3 cup unsalted roasted cashews

Description

Stir-fried ramen noodles with chicken mince and pak choy, and topped with crunchy cashews, make a delicious dinner that can be on the table in 20 minutes.

To prep the pak choy, trim the base, then ensure you wash the leaves and stalks before chopping.

Method

Step 1 of 4

Cook noodles according to packet instructions. Drain.

Step 2 of 4

Meanwhile, heat oil in a large, deep frying pan or wok over high heat. Add mince and cook for 8 minutes, breaking up lumps with a wooden spoon, or until well browned.

Add pak choy and cook for 2 minutes, stirring, or until softened.

Step 4 of 4

Add noodles, meal base and corn, then cook for 2 minutes, stirring, or until heated through. Divide noodle mixture among bowls. Serve topped with cashews.
