  • 2 scallions, finely chopped
  • 1 clove garlic, crushed
  • 1/2teaspoons packed light brown sugar
  • 5teaspoons light soy sauce

  • 2teaspoons chili oil
  • 1/4teaspoons black rice vinegar
  • 1/2teaspoons sesame seeds, toasted

Method

Step 1 of 3

Cut the cucumbers into finger-thick batons and put into a wide glass or ceramic bowl.

Step 2 of 3

Mix together all the remaining ingredients in a small bowl and pour them over the cucumber. Toss to mix well. Cover and let marinate at room temperature for 1 hour.

Step 3 of 3

Spoon onto small plates and serve with rice.
