- 1.20kilograms red or green cabbage
- 2tablespoons sea salt flakes
Description
Cabbage and salt are all it takes to make this fermented food. Use sauerkraut in sandwiches and potato salad, or stir it through mashed potato or soup.
Instead of kale, use other greens such as baby spinach, baby rocket leaves or chopped broccoli.

Cabbage releases gas as it ferments, so occasionally open the jar lid to release the pressure, which prevents the jar from exploding.
