  • 1 small red onion, finely chopped
  • 5milliliter virgin olive oil spray
  • 2tablespoons extra virgin olive oil
  • 2tablespoons chives, finely chopped
  • 3 lemons
  • 4 slice seeds & grain sourdough bread
  • 210grams cans brisling sardines in oil, drained
  • 2 long red chillies, deseeded, finely chopped

Method

Step 1 of 3

Finely grate rind and juice 1 lemon. Cut remaining lemons into wedges.

Step 2 of 3

Combine onion, chilli, chive, lemon rind and lemon juice in a bowl and season to taste. Heat a chargrill pan over a high heat. Spray bread with oil and chargrill for 3 minutes each side or until charred.

Step 3 of 3

Place toast onto serving plates. Top with sardines and salsa. Drizzle with oil and serve with lemon wedges.
