  • 4 red capsicums
  • 1 pinch salt (to taste)
  • 5milliliter virgin olive oil spray
  • 1tablespoons baby salted capers, rinsed
  • 1tablespoons extra virgin olive oil
  • 1tablespoons white wine vinegar
  • 2tablespoons chives, finely chopped

Method

Step 1 of 5

Preheat oven to 200°C.

Step 2 of 5

Put red capsicums on a baking tray lined with baking paper.

Step 3 of 5

Spray with olive oil and roast for 35-40 minutes or until skin of capsicum is charred and blistered.

Step 4 of 5

Transfer to a bowl and cover with plastic. Leave to cool. Remove skin from capsicum, halve, remove seeds and slice thinly. Transfer to a serving bowl.

Step 5 of 5

Add chives, rinsed baby salted capers, olive oil, white wine vinegar, salt and white pepper. Stir until combined.
