Method

Step 1 of 1

Place 1 cup sugar, 1 vanilla bean and 1 cinnamon stick into a small saucepan. Add 1 cup water and stir or low heat until sugar has dissolved. Simmer for 10 minutes until syrupy. Meanwhile, place 500g pitted cherries into a sterilised, sealable glass jar. Pour over syrup and enough brandy to cover cherries and fill jar. Seal. Once opened, refrigerate for up to 3 months.
