  • 1 medium butternut squash, cut into bite size portions
  • 2tablespoons maple syrup
  • 2tablespoons olive oil
  • 1/2teaspoons salt
  • 1teaspoons cracked black pepper
  • 100grams feta, crumbled
  • 200grams spinach, washed and drained
  • 1/4 cup balsamic vinegar

Description

A warm salad with a light balsamic sweet dressing.

Method

Step 1 of 3

Pre-heat the oven to 200°C/180°C fan-forced. Place the chopped butternut squash in a baking dish and toss with the maple syrup, oil, salt and pepper and cover fully and toss halfway through cooking.

Step 2 of 3

Roast this in the oven for 20 minutes. While this is roasting, reduce the balsamic in a small pan on a medium heat until it reduces a little.

Step 3 of 3

Remove the butternut squash from the oven and toss in a serving bowl with the spinach and feta. Drizzle with the balsamic before serving.
