Description

This crumble is a traditional Irish dessert which makes the most of rhubarb season, delicious served warm with custard.

Method

Step 1 of 3

Pre-heat the oven to 180°C/160°C fan-forced. Place the chopped rhubarb in an ovenproof dish, stir in 2 tablespoons of water and 110g of sugar.

Step 2 of 3

In a large bowl, rub the butter and flour together until it resembles bread crumbs. Mix in the remaining sugar and cinnamon.

Step 3 of 3

Spread the crumble mix evenly on top of the rhubarb and bake for 35-40 minutes until golden and bubbling.
