  • 2teaspoons caster sugar
  • 100grams rolled oats
  • 50grams unsalted butter, diced
  • 40grams dark muscovado sugar
  • 25grams flaked almonds

Method

Step 1 of 3

Divide the apple slices and blackberries between 4 small ovenproof dishes or ramekins and sprinkle with the caster sugar.

Step 2 of 3

In a food processor, blitz the oats, butter, sugar and almonds. Spoon the oat mixture over the fruit and bake in a preheated oven, 190°C , Gas Mark 5, for 22-25 minutes until golden.

Step 3 of 3

Whip 300 ml double cream until soft peaks form. Gently fold in 150 g puréed apple and 125 g lightly crushed blackberries. Divide between 4 glasses and chill until ready to serve.
