  • 1/3 cup brown sugar
  • 1/3 cup rolled oats
  • 1/2 cup plain flour

  • 110grams Lucky Australian toasted sliced almonds
  • 30grams Lucky Australian almond meal
  • 2tablespoons shredded coconut
  • 90grams melted butter
  • 1kilograms granny smith apples, peeled and chopped
  • 2tablespoons raw or brown sugar
  • 1/4teaspoons ground cinnamon
  • 1/4 cup water
  • 3 large stems rhubarb, trimmed and cut in 2.5cm lengths
  • 1/2 cup frozen raspberries

Description

You can make this apple rhubarb crumble into individual portions or as one big crumble. Enjoy with a scoop of vanilla ice-cream or a drizzle of cream.

Method

Step 1 of 5

Preheat oven to 180°C fan forced 160°C

Step 2 of 5

Place apple, sugar, cinnamon and water in a large saucepan over medium heat. Cover. Cook for 3-4 minutes or until apple starts to soften. Add rhubarb, cook covered, for 3 minutes or until rhubarb just softens.

Step 3 of 5

Spoon into 5 x 1 cup individual dishes or a 5-cup capacity oven dish.

Step 4 of 5

Combine pistachios, almonds, brown sugar, oats, flour, almond meal, coconut and butter.

Step 5 of 5

Pile crumble on top of fruit and bake for 20 minutes. Serve warm with vanilla ice cream.
