  • 600grams cottage cheese, drained
  • 135grams butter, softened, divided
  • 100grams granulated sugar
  • 4tablespoons cornflour
  • 30grams sour cream
  • 4 large eggs
  • 60grams raisins
  • 1 medium orange, juice and zest
  • 2teaspoons vanilla extract
  • 75grams dark chocolate, chopped

Description

This traditional Ukrainian dessert is deliciously creamy, baked gently and coated in a chocolate glaze.

Method

Step 1 of 5

Pre-heat the oven to 160°C. Place the cottage cheese in a large bowl and blend until smooth with an immersion blender. Add the sugar, cornflour and orange zest and mix well.

Step 2 of 5

Soak the raisins in orange juice for 10 minutes to plump up, drain and dry on kitchen paper.

Step 3 of 5

Add 90g of soft butter to the cheese mix and add one egg a time, whisking well after each addition. Whisk in the vanilla and sour cream and fold the raisins into the mixture.

Step 4 of 5

Pour the batter into a loaf tin lined with parchment paper and bake for 45 minutes. Turn off the oven and leave to cool inside. Once cooled, place in the fridge to set for 1-2 hours. Once chilled, carefully turn out onto a plate.

Step 5 of 5

Melt the rest of the butter with the chocolate in a bowl in the microwave. Set aside to cool then glaze the cake and leave to set before slicing.
