- 4 cubes Vegeta beef stock
- 2tablespoons soy sauce
- 1 bunch baby pak choy, quartered
- 250grams Chang’s rice vermicelli noodles
- 1 long red chilli, sliced

Description
Serve up hearty, warming flavours with this 25-minute spicy beef noodle soup. Perfect for a chilly evening!
Method
Step 1 of 3
Heat oil in a large frying pan over high heat. Add mince and cook, stirring to break up lumps, for 10 minutes or until cooked through, browned and slightly crispy. Transfer mince to a bowl and set aside.
Step 2 of 3
Combine ginger, stock, soy and 2 cups water to a medium saucepan and bring to the boil over high heat. Reduce to medium and add pak choy, cooking for a further 2 minutes. Add noodles and cook for a further 2 minutes or until noodles are tender.
Step 3 of 3
Divide noodle mixture and broth among bowls. Top with mince and chilli. Serve.
