  • 4 large free range eggs
  • 500grams chicken breast, cut into strips
  • 28grams Maggi Chinese fried rice recipe base
  • 450grams Sunrice microwave rice
  • 250grams Woolworths COOK superfood vegetables stir-fry mix
  • 1/2 bunch spring onion, sliced

Method

Step 1 of 3

Heat oil in a large frying pan over high heat. Whisk eggs in a medium bowl. Pour into frying pan and cook for 5 minutes until cooked. Transfer omelette to a chopping board, roll up and slice into thin strips.

Step 2 of 3

Add chicken to pan and cook for 10 minutes or until cooked through and browned. Meanwhile, cook rice following packet instructions. Add recipe base, rice and vegetables. Cook, stirring, for 5 minutes or until hot.

Step 3 of 3

Divide rice mixture among bowls. Top with onion and egg. Serve.
