Description
Liven up any weeknight with this chilli fish dish. This one-pan recipe will make the post-dinner clean-up a breeze.
Method
Step 1 of 2
Spread chilli over fish fillets. Heat oil in a large frying pan over high heat and cook for 1 minute each side or until fish is opaque. Transfer fish to a plate and set aside.
Step 2 of 2
Add rice, tomatoes and stock to pan and bring to a boil over high heat. Return fish to pan, reduce heat to low and cook, covered, for 25 minutes or until liquid has absorbed and fish is cooked through. Add peas and cook for a further 5 minutes until peas are bright green and tender.
