  • 1 lemon, 1/2 juiced, 1/2 cut into wedges
  • 1/2 cup creamy cocktail seafood sauce
  • 1 Lebanese cucumber, thinly sliced
  • 1 avocado, deseeded, cut into 1cm pieces
  • 60grams baby spinach leaves
  • 1/2 bunch chives, cut into 1cm lengths
  • 1/4 bunch dill, sprigs picked
  • 500grams medium cooked tiger prawns, peeled, deveined, tails intact

Description

Put a fresh twist on the classic prawn cocktail with this sensational pasta salad complete with juicy tiger prawns, seafood sauce and creamy avocado.

Tip:
To freshen up your herbs, soak them in a bowl of iced water for 30 minutes.

Method

Step 1 of 3

Cook pasta in a saucepan of boiling, salted water according to packet instructions. Drain. Refresh under cold water. Drain.

Step 2 of 3

Combine lemon juice, sauce and 1 tbs water in a small bowl.

Step 3 of 3

Place pasta, cucumber, avocado, spinach, chives and half of the dill in a large bowl and toss to combine. Top with prawns and drizzle with dressing. Season with pepper. Scatter over remaining dill and serve with lemon wedges.
