  • 1tablespoons vegetable oil
  • 460grams Woolworths skin off Tasmanian salmon portions
  • 1/4 cup sweet chilli sauce
  • 450grams microwave white long-grain rice
  • 315grams Thai salad kit
  • 1/4 bunch coriander, leaves picked (to serve)
  • 1 lemon, cut into wedges (to serve)

Description

This flavourful sweet and sticky salmon with fluffy white rice and crunchy salad is so quick and easy. Try it tonight.

Method

Step 1 of 4

Heat half of the oil in a large frying pan over medium-high heat. Cook salmon for 3 minutes or until almost cooked through. Turn over, then cook for 2 minutes, brushing with sweet chilli sauce, or until salmon is just cooked through.

Step 2 of 4

Meanwhile, heat rice according to packet instructions.

Step 3 of 4

Prepare salad according to packet instructions, reserving crispy onions.

Step 4 of 4

Divide rice and salad among bowls, then top with salmon, and sprinkle with coriander and reserved crispy onion. Serve with lemon.
