- 2centimeters ginger, grated
- 600grams green prawns, peeled, deveined, tails intact
- 2 leeks
- 1tablespoons peanut oil
- 1 red capsicum, deseeded, finely sliced
- 1 carrot, cut into matchsticks
- 1 bunch broccolini, sliced
- 1/2tablespoons sesame seeds
- 1/4 cup salt-reduced soy sauce
- 1tablespoons rice wine vinegar
- 2teaspoons sesame oil
- 1teaspoons brown sugar
- 1 clove garlic
Description
Take the stress out of a busy night with this delicious stir-fry loaded with prawns and veggies that you can get on the table in 20 minutes.
Method
Step 1 of 4
Combine soy sauce, vinegar, sesame oil, sugar, ginger and garlic in a medium bowl.
Step 2 of 4
Add prawns and stir to coat. Set aside.
Step 3 of 4
Wash leek well and roughly chop. Heat a wok or large frying pan over medium-high heat. Add peanut oil and swirl to coat. Add vegetables and toss for 4 minutes or until they start to soften.
Step 4 of 4
Add prawns and sauce and cook for 2-3 minutes or until prawns change colour. Serve sprinkled with sesame seeds.
