Method
Step 1 of 4
Remove as much of the white pith as possible from 1 mandarin peel. Shred the peel. Halve the mandarins and juice. Combine shredded peel, 1 cup of mandarin juice, sugar, ginger and five spice in a small saucepan over medium heat. Stir until sugar dissolves and mixture comes to the boil. Whisk cornflour with 1 tbs cold water in a bowl until smooth. Add to sauce and stir until mixture comes to the boil and thickens. Add spring onion. Remove from heat and season with sea salt flakes and ground white pepper.
Step 2 of 4
Preheat oven to 180°C. Heat oil in a frying pan over medium heat. Add pork and cook for 8 minutes or until well browned. Transfer to a baking tray and bake for 10 minutes or until cooked through.
Step 3 of 4
Meanwhile, place the rice in a microwave-safe bowl. Add 2 cups warm water. Cook on HIGH (100%) for 12 minutes or until rice is cooked and liquid has been absorbed. Gently stir with a fork to separate grains.
Step 4 of 4
Cook the broccolini in a saucepan of boiling water for 2 minutes or until just tender. Drain. Slice pork and serve with the rice and broccolini, with the sauce spooned over.
