Baked Pork Chops with Apple and Rosemary

- 2 white onions, quartered
- 1 Royal Gala apple, thinly sliced on the round
- 2tablespoons extra virgin olive oil
- 4 pork loin chops
- 1/4 cup rosemary sprigs
Method
Step 1 of 2
Preheat oven to 250°C. Drizzle base of roasting pan with half the oil. Add onion, cut-side down. Bake for 5 minutes.
Step 2 of 2
Meanwhile, heat remaining oil in a frying pan over high heat. Cook pork for 8 minutes, turning over halfway, or until golden. Add pork, apple and rosemary to roasting pan with onion. Bake for a further 5-8 minutes or until pork is cooked through and apple is golden. Serve with pan juices.
