  • 1packets coleslaw kit
  • 1/4 cup brown sugar
  • 6 lamb loin chops
  • 3 cloves garlic

Method

Step 1 of 5

Preheat barbecue on high.

Step 2 of 5

Heat olive oil in a small saucepan over medium heat. Add garlic, ginger and onion and sauté for 2 minutes or until onion is translucent. Remove pan from heat and transfer onion mixture to a food processor with plums and process for 2-3 minutes or until a smooth purée forms.

Step 3 of 5

Pour purée back into saucepan and return to medium heat. Add sugar. Cook, stirring, until colour darkens to a deep red and mixture becomes very thick, about 5 minutes. Season to taste.

Step 4 of 5

Cook lamb chops on the barbecue for 5 minutes each side or until cooked through.

Step 5 of 5

Prepare coleslaw according to packet instructions and serve with chops and sauce.
