- 1 cup Vitasoy Greek Style Soy Yogurt – Plain
- 1tablespoons lemon juice
- 2teaspoons extra virgin olive oil
- 1 clove garlic, crushed
- 2teaspoons dill, finely chopped
- 2teaspoons mint, finely chopped

Method
Step 1 of 3
Finely grate cucumber and gently squeeze out the excess water. Discard liquid.
Step 2 of 3
In a small bowl, combine the cucumber, yoghurt, lemon juice, oil, garlic and herbs. Season to taste. Chill until ready to use.
Step 3 of 3
Serve topped with a drizzle of oil.
