  • 1/3 cup extra virgin olive oil (plus extra to serve)
  • 375grams large pasta spirals
  • 1/2 bunch of basil, leaves picked
  • 50grams parmesan finely grated

Featuring a fresh pomodoro sauce made with Solanato tomatoes, onion, garlic, olive oil and fragrant basil, this pasta recipe is a cinch to make. Try it today!

Method

Step 1 of 4

Preheat oven to 220°C/200°C fan-forced. Place tomatoes, onion, garlic and oil in a shallow baking dish. Season with pepper. Toss to combine. Bake for 30 minutes or until tomatoes start to blister.

Step 2 of 4

Meanwhile, cook pasta according to packet instructions. Drain.

Step 3 of 4

Using back of a fork, roughly mash tomato mixture to make a sauce.

Step 4 of 4

Add pasta to dish and toss to combine. Divide mixture among bowls. Top with basil and parmesan. Serve drizzled with extra oil.
