  • 300grams broccoli, broken into florets with stalks
  • 1tablespoons olive oil
  • 1 red onion, finely chopped
  • 1 pinch salt
  • 1 pinch freshly ground black pepper
  • 1 medium fresh medium-hot red chilli, deseeded and finely chopped
  • 1/2 small glass dry white wine
  • 1 lemon, zest only
  • 2 cloves garlic, grated or finely chopped
  • 350grams penne
  • 1 lemon, halved
  • 1 Parmesan cheese, grated (to serve)

Method

Step 1 of 3

Cook the broccoli florets in a pan of boiling salted water for 10-15 minutes or until soft and slightly overcooked. Drain and dice. Heat the oil in a large frying pan, add the onion and a pinch of salt, and cook over a low heat for 5 minutes or until soft and translucent. Stir in the chilli, then add the wine. Raise the heat and simmer for a couple of minutes.

Lower the heat, add the lemon zest and garlic, then season well with salt and black pepper. Add the broccoli, stir, and put to one side.

Meanwhile, cook the pasta in a large pan of boiling salted water for 10 minutes or until it is cooked but still has a bit of bite to it. Drain, keeping back a tiny amount of the cooking water. Return the pasta to the pan and toss together. Toss with the broccoli mixture, then squeeze over the lemon juice. Sprinkle with Parmesan (if using), and serve.
