Method

Step 1 of 3

Place frozen mixed berries, sugar and water in a saucepan and simmer over a low heat for 3 minutes until berries have softened.

Step 2 of 3

Remove from heat. Using a prepared pancake base mixture, prepare and cook pancakes following packet instructions.

Step 3 of 3

Stack pancakes onto serving plates and top with 1-2 scoops of vanilla ice-cream. Spoon over berry sauce, dust with icing sugar and serve immediately.
