  • 1 ripe yellow peach, halved, destoned, cut into wedges (to serve)

Description

Play it cool and kick back with a refreshing nectarine granita topped with peaches and cream. This easy dessert recipe uses just five ingredients.

Variation:
Turn this into an impressive cocktail by omitting the cream, and pouring sparkling white wine over the granita to serve.

Method

Step 1 of 4

Place nectarines, lemon juice, sugar and 1/2 cup water in a food processor and process for 1 minute or until smooth and combined.

Step 2 of 4

Pour mixture into a 26 x 37cm (3cm deep) metal tray. Freeze, uncovered, for 2 hours or until just starting to freeze.

Step 3 of 4

Using a fork, scrape frozen mixture into centre. Freeze for 1 hour. Repeat process twice or until all of granita has been scraped and coarse ice crystals have formed.

Step 4 of 4

To serve, divide granita among serving glasses, and top with cream and peach wedges.
