  • 1/2 cup brown sugar
  • 1teaspoons freshly cracked black pepper
  • 2 limes, zested, halved
  • 1 pineapple, peeled, halved lengthways, thickly sliced
  • 100grams plain shortbread biscuits, crushed
  • 1/2 bunch mint, leaves picked
  • 1/2 cup coconut yoghurt (to serve)

Description

Sweet caramelised pineapple is the perfect dessert for a barbecue. Marinated in zesty lime, rum and pepper, the flavours are like no other.

Method

Step 1 of 4

Place rum, sugar, pepper, zest and 1 cup boiling water in a baking dish and stir to combine. Add pineapple and lime and turn to coat. Stand for 30 minutes to allow flavours to infuse.

Step 2 of 4

Preheat oven to 220°C/200°C fan-forced.

Step 3 of 4

Preheat a chargrill pan over high heat. Cook pineapple and lime, reserving marinade in baking dish, for 5 minutes or until golden. Return pineapple to marinade. Bake for 10 minutes or until liquid has reduced and pineapple is tender.

Step 4 of 4

Squeeze limes over pineapple and scatter over biscuits and mint. Serve with yoghurt.
