- 1 red onion, finely chopped
- 500grams beef mince
- 35grams taco seasoning
- 400grams no-added-salt diced tomatoes
- 125grams black beans, drained, rinsed
- 1 cup shredded tasty cheese
- 4 flour tortillas
- 170grams original Doritos
- 1/4 bunch coriander, leaves picked
- 1 gourmet tomato, finely chopped
- 1/3 cup sour cream

Get your nachos and pie fix with this delicious, simple recipe that is perfect for a night in.
Method
Step 1 of 4
Heat oil in a large frying pan over medium heat. Cook three-quarters of the onion for 5 minutes, stirring, or until softened. Add beef. Cook for 5 minutes, breaking up lumps with a wooden spoon, or until browned. Add seasoning and cook, stirring for 1 minute. Add tomatoes and beans. Reduce heat to low and simmer for 10 minutes, stirring occasionally, or until thickened. Remove from heat. Stir through half of the cheese.
Step 2 of 4
Preheat oven to 200C/180°C fan-forced. Grease a 5cm-deep and 20.5cm base ceramic pie dish. Arrange tortillas in dish to cover base and sides. (Tortillas may overlap.) Press to secure. Spoon mince mixture over tortillas, pressing to compact. Bake for 10 minutes or until tortilla crust is golden. Top with half of the corn chips and remaining cheese to create pie. Bake for a further 10 minutes or until golden.
Step 3 of 4
Meanwhile, finely chop half of the coriander. Combine tomato, chopped coriander and remaining onion in a small bowl. Season.
Step 4 of 4
Top pie with sour cream, salsa and remaining coriander leaves. Serve with remaining corn chips.
