- 1 large onion, peeled and sliced
- 500grams beef mince, lean
- 2 cloves garlic, peeled and minced
- 1 1/2tablespoons fajita seasoning
- 1 3/4 cup beef stock, made with 1 stock cube
- 400grams chopped tomatoes
- 125grams mozzarella, grated
- 60grams jalapeno peppers, drained

Description
These loaded taco fries are lighter than takeaway but just as delicious.
Method
Step 1 of 4
Pre-heat the oven to 200°C/180°C fan-forced. Spread the oven chips out on a baking tray and bake for 25 minutes, tossing halfway through.
Step 2 of 4
Heat the oil in a large pan and cook the onions for 5 minutes. Add the beef mince and cook for 5 minutes until browned. Add the garlic and fajita seasoning and cook for 2 minutes.
Step 3 of 4
Pour over the beef stock and chopped tomatoes, bring to the boil, reduce the heat and simmer for 10-12 minutes, until reduced.
Step 4 of 4
Tip the chips into an ovenproof serving dish, top with chilli, sprinkle with cheese and place under a hot grill for 2-3 minutes until the cheese has melted. Top with jalapenos and serve.
