  • 400grams bolognese sauce
  • 200grams cheddar cheese, grated
  • 120grams sour cream
  • 100grams bacon, chopped and cooked until crisp
  • 1 spring onion, finely chopped

Description

Use your leftover bolognese sauce in this filling and cheesy baked potato dish.

Method

Step 1 of 3

Preheat the oven to 180°C/160°C fan-forced.

Step 2 of 3

In an aluminum foil lined baking tray, place the potatoes and drizzle the olive oil and season with salt. Bake the potatoes for 50 minutes or until tender.

Step 3 of 3

Cut a small cross in the top of each potato. Hold the potato using a clean dish towel and squeeze the base gently to open the top up slightly. Top the potato with bolognese and cheese. Return to the oven on broiler setting and cook for 3 minutes or until the cheese is bubbly and melted. Upon serving, top with a dollop of sour cream and garnish with chopped crispy bacon bits and finely chopped spring onions.
