  • 1 pinch ground black pepper
  • 200grams baby green beans, trimmed
  • 1/2 cup mint, leaves coarsley chopped
  • 1/2 cup parsley, leaves coarsley chopped
  • 200grams sugar snap peas, trimmed
  • 1tablespoons white wine vinegar
  • 1 lemon, juiced
  • 1teaspoons dijon mustard
  • 180grams fetta, drained, oil reserved
  • 200grams baby spinach leaves
  • 500grams beans

Method

Step 1 of 2

Blanch broad beans, sugar snap peas and beans in boiling, salted water for 3 minutes or until just tender. Drain and place in ice water for 5 minutes. Drain. Remove outer skin of broad beans.

Step 2 of 2

Combine broad beans, peas, beans, spinach, herbs and feta in a large serving bowl. Add reserved oil, lemon juice, vinegar, mustard, salt and pepper into a screw top jar and shake to combine. Drizzle dressing over salad. Serve.
