  • Birch & Waite golden goddess dressing
  • 3tablespoons Obento Rice Wine Vinegar
  • 1tablespoons honey
  • 1/2 long red chilli, thinly sliced
  • 400grams medium beetroot, peeled (we used red and yellow beets)
  • 40grams baby rocket
  • 40grams baby spinach leaves
  • 1 small cos lettuce, chopped
  • 320grams Perfection Mix Mini Tomatoes , some halved
  • 6 red radish, thinly sliced into rounds
  • 3 Lebanese cucumber, thinly sliced into rounds
  • 2 avocado, thinly sliced
  • 3tablespoons pistachio nuts, roughly chopped

Method

Step 1 of 3

Whisk the vinegar and honey together in a small bowl until combined. Stir in chilli. Thinly slice the beets into a bowl using a mandolin. Pour over the vinegar mixture. Cover and stand 10-15 minutes for a quick pickle. Drain

Step 2 of 3

Combine rocket, spinach and lettuce in a large bowl or 4 individual bowls. Top with tomatoes, radish, cucumber, avocado and pickled beets. Scatter with pistachio nuts and micro herbs if using.

Drizzle with plenty Birch & Waite Golden Goddess dressing. Serve and enjoy
