- 1 1/2 cup cream (save 0.5 cup, whipped, to decorate)
- 80grams butter, melted
- 1teaspoons vanilla extract
- 12 strawberries, chopped (to decorate)
- 3teaspoons gelatine powder
- 200grams white chocolate, melted and cooled slightly
- 375grams cream cheese, room temperature
- 400grams oreo biscuits
- 1/2 cup caster sugar

Method
Step 1 of 4
Process 250g of the biscuits to a fine crumb in a food processor. Add the melted butter to the crumbs then pulse to combine.
Step 2 of 4
Line a 12-hole medium muffin tray with paper cases. Place 1 tbs crumb mixture into each case and press evenly over base. Put in fridge to chill.
Step 3 of 4
Meanwhile, dissolve gelatine in 1/4 cup boiling water. Beat the cream cheese, sugar and vanilla in a large bowl until smooth. Beat in the cream, gelatine and chocolate until combined.
Step 4 of 4
Chop remaining biscuits and stir through the mixture. Spoon over crumb bases and chill until firm. Decorate with whipped cream and strawberries. Serve.
