  • 185grams Arnott's Butternut Snap Cookie
  • 1/3 cup thickened cream
  • 50grams butter
  • 395grams Nestle sweetened condensed milk
  • 2 passionfruit
  • 3teaspoons Mckenzie's Baking Aids Gelatine
  • 1 lemon (zest & juice)
  • 500grams cream cheese (softened)

Method

Step 1 of 5

Combine biscuits and butter, press into a 22cm spring form pan, refrigerate until firm.

Step 2 of 5

Beat cream cheese and Nestle sweetened condensed milk until smooth, beat in cream.

Step 3 of 5

Mix gelatine with boiling water (1/4 cup - 60mL) to dissolve, beat into cream cheese mixture with lemon zest and 2 teaspoons of lemon juice.

Step 4 of 5

Pour evenly over crumb crust, refrigerate until set (about 3 hours).

Step 5 of 5

Serve with a drizzle of passionfruit pulp.
