  • 125grams Mcvitie's Digestives Biscuits Plain Original, crushed
  • 80grams butter, melted
  • 3teaspoons Mckenzies Gelatine Powder
  • 500grams Philadelphia Cream Cheese Block , softened, at room temperature
  • 400grams Nestle Sweetened Skim Condensed Milk
  • 150grams Nestle bakers choice dark choc melts, melted
  • 680grams Nestle Kit Kat bars, broken into fingers
  • 125grams fresh strawberries (for decoration)

Method

Step 1 of 6

Grease a 22cm round springform pan. Line base and side with baking paper, extending paper 1cm above the edge.

Step 2 of 6

Place biscuits in a food processor and process until they resemble fine breadcrumbs. Add butter and process until combined. Using back of a metal spoon, press mixture over base of pan to compact. Refrigerate until required.

Step 3 of 6

Meanwhile, place 2 tbs boiling water in a small bowl and sprinkle over gelatine, stirring until dissolved. Set aside to cool.

Step 4 of 6

Using an electric mixer, beat cream cheese and condensed milk until smooth and combined. Beat in gelatine mixture until just combined. Pour mixture over biscuit base, then drizzle with chocolate and use a knife to swirl through the cream cheese mixture. Refrigerate for 3 hours or until set.

Step 5 of 6

Transfer cheesecake to a platter. Using 3 Kit Kat bars, arrange fingers around sides of cheesecake. Wrap with a ribbon to decorate.

Step 6 of 6

Finely chop remaining Kit Kat fingers and sprinkle over top of cheesecake. Serve topped with strawberries.
