  • 200grams fresh cherries
  • 150grams Mcvitie's Digestives Biscuits Plain Original
  • 80grams butter, melted
  • 1tablespoons Mckenzies Gelatine Powder
  • 500grams Philadelphia Cream Cheese Block , cubed, softened
  • 1/2 cup caster sugar
  • 395grams Nestle Sweetened Condensed Milk
  • 300milliliter thickened cream

Method

Step 1 of 4

Grease and line a 22cm round springform pan and a large baking tray with baking paper.

Step 2 of 4

Place biscuits in a food processor and process until they resemble fine breadcrumbs. Add butter and process until combined. Using back of a metal spoon, press mixture over base of pan to compact. Chill in fridge until needed.

Meanwhile, place 1/3 cup boiling water in a small bowl and sprinkle over gelatine, stirring until dissolved. Set aside for 3 minutes to cool. Meanwhile, using an electric mixer, beat cream cheese, sugar and milk until smooth and combined. Beat in gelatine mixture, then add cream and beat until smooth and slightly thickened. Add choc melts and beat until combined. Pour mixture over biscuit base and refrigerate for 4 hours or until set.

To decorate, spread three-quarters of the choc melts evenly over baking tray. When chocolate is almost set, drag a butter knife across chocolate to create curls. Dip cherries into remaining choc melts. Decorate cheesecake with chocolate curls and cherries, then serve.
